ALELOR: The Last Mustard Maker of Alsace
The company Alélor has specialised since 1873 in the production of classic and flavoured mustards, horseradish, mayonnaises, sauces, pickled gherkins, and pickles.
In 1939, the mustard factory took the name Alélor (a contraction of Alsace and Lorraine). In parallel, the Alsatian horseradish factory Raifalsa was established in 1956. The two brands merged in 2009 under the name Alélor.
Alsatian mild mustard is the product of a careful blend of brown and yellow mustard seeds. The former provides strength, the latter smoothness. Both varieties are finely ground using a stone mill, to which vinegar, water, and mustard flour are added. The result is an incomparably smooth, mild mustard with the authentic and refined taste of a locally produced condiment made according to the principles of responsible farming.
In Alsace, the production of mild mustards is a tradition that has been a source of regional pride since the 19th century, with Alélor being the only mustard maker still producing according to this method and keeping the tradition alive.
